Who would have thought a cooking demo could be SO MUCH FUN! If you attended the Marketplace at Oxbow Public Market on January 16, you would know what we’re talking about. What made it so…special? First, the space at CRU was perfect – complete with overhead projections. Then there was the truffle dish that Catherine Bergen, owner of C Casa, concocted for the event: a Black Truffle Mushroom Enchilada, no less. And bringing it all together was the indomitable, Emmy award-winning CBS Foodie Chap Liam Mayclem, who is no slouch when it comes to witty kitchen repartee that only an Irishman with an English accent could pull off. The result was a very tasty dish served up by a spirited good-time-had-by-all.
You may not get Catherine and Liam to come to your kitchen, but you can recreate the delicious enchilada any time you want. Here’s the recipe – it’s easy!
